Boil and Bake Fruit Cake

Fillet of a fenny snake, in the cauldron boil and bake, Eye of newt and toe of frog ....

But MMish and I changed the recipe to something that wouldn't upset him ... he's very, very scared of hidden eyes!

This is easy!

1 cup liquid (we did 3/4 water and 1/4 alcohol ... anything goes, rum, sherry, scotch ... nooooooooooo .. not all at the same time!)
4 cups mixed fruit (we used a cup each of dried cranberry, blueberry, raisin, cherry)
(we also put some glace cherries in .. but they weren't in the recipe)
1 cup white sugar (but we used brown)
2 cups all purpose flour
1 teasp baking soda
2 eggs beaten

Anyway ... get your oven on ... 300F (150C) and grease a 9x5 inch loaf pan (we doubled the recipe and used a round tin .. God knows how big it was .. the cake lasted about 5 days)
Put the liqui, fruit, sugar and butter in a saucepan over medium heat and bring to boil, stirring occasionally. Boil gently for 10 mins. Allow to cool somewhat.
Sift flour and baking soda into large bowl. Add boiled mixture, beat eggs and add.
(Basic rule for low cholesterol diets is 4 egg whites = 2 whole eggs)
Pour into loaf pan.
Bake for 90 mins ... toothpick should come out clean. Under cook rather than over cook. Cool cake in pan for at least 10 mins before removing.

btw .. MMish also hates the way I change recipies! To him it isn't cooking .. it's a friggin laboratory experiment!
